Copy cat, Copy Cat!

We love this place!

Unfortunately, the one closest to us closed last winter. That led to trying to copy the fave entree....the citrus fired shrimp and chicken fajitas.
Marinating them with the copy cat recipe found here, and adding a spice or two.

Served cadillac style with black beans and rice, guacamole and nonfat yogurt instead of sour cream. (The mountain of veggies are hiding underneath) Served in low fat multigrain tortillas.


Even made chimichurri to go on. Plenty left over for other nights on grilled meats.
It was a yummy success, don't even care if I get called copy cat!
