Hidden Treasure Carrot Cake

This was an unknown magazine clipping recipe, so can't give credit, where credit is due.
And believe me, it deserves a lot of credit!
This picture is of the LAST piece of cake. It went over like gangbusters! There were pieces with a fuller, prettier hidden treasure tunnel, but we would have to get x-rays for pictures of them now. They're probably still intact, as this cake was inhaled.

Hidden Treasure Carrot Cake
3 eggs
1-3/4 cups sugar
3 cups shredded carrots
1 cup good olive oil
2 cups unbleached flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1/2 cup chopped pecans
FILLING:
1 pkg. softened cream cheese
1/4 cup sugar
1 farm fresh egg
Beat eggs and sugar, in a mixing bowl. Add oil and carrots, and mix til well incorporated. Add the baking soda,cinnamon. salt, and flour. Mix well. Stir in nuts. Grease and flour bundt pan. Pour in 2 1/2 -3 cups of cake batter.
In a mixing bowl, mix cream cheese, and sugar together. Add egg, and beat well.
Spoon this filling over the cake batter in the bundt pan. Try to avoid the inner tube area, and the outer edges of the pan. (You want this treasure to be hidden).
Top off with the remaining carrot batter.
Bake at 350 for an hour. (Or clean toothpick test)
Cool in pan 10 minutes before turning out of pan.
It suggested a cream cheese frosting, but we left ours unfrosted. We used our cream cheese for the tunnel, and didn't want to make a trip to the store. I'm kind of glad, as this was plenty sweet to suit me, (and everyone else around here, from the looks of things.)

Yum- sound like a perfect recipe to end summer and kick off fall...
